Jeff,
What about doing it Jimmy Buffet style? Fly into Miami, get a cheap
car, get a cheap place, maybe in the upper keys, get two bottles of
Rum (one light, one dark), and book a guide or guides for a few days.
Some guides will offer multi day discounts (Captain Mark Hall comes to
mind). Hopefully you fish so hard your lodging will just be a place to
crash. You can go for Peacock Bass, fish the everglades, and go for
big saltwater fish...or pick one of those and dial it in over a few
days.
If you have any cash left over, head back up to Miami for the last
night, that to is a target rich environment. If you are married then
treat Miami like your fishing and just practice catch and release.
Whatever you decide,I would book sooner than later and spend the next
few months getting ready for an awesome trip.
