I only fished on the kayak twice for striper in NH and MA last year. It was a two people ocean kayak, and I casted on the front seat and my friend paddled on the back seat. I found it was not easy to cast a 9wt rod, especially when I need to haul. Sometimes, the wind direction suddenly changed and pushed us to the outgoing current. That is why I am thinking to get an inflatable boat with power. I know it is expensive, and I don't have the budget now. 

How do you compare the inflatable kayak to the regular kayak on the water? easy to paddle? 

What is your kayak model? It is mainly for freshwater or saltwater? 

What is the total investment for the whole setup?

I love my inflatable kayak.  It is VERY stable.  I wouldn't stand and fish but there really is no need for this. 

I have fished the ocean off of the OBX with my kayak and it was awesome.  I have also done a lot of fishing at the end of the Occoquan River and this includes dealing with rocks and rapids.  I have paddled it up class 1 ledges and paddled down them as well.  The platform is very versatile.  I even have a depth finder for the kayak.

Having an inflatable boat would be more costly.  It also takes more room to store. You also may have to register it if you put an outboard or motor on it.  The investment would probably be greater for the boat as well.  You should be able to pick up a good inflatable kayak for around $500.  you can spend more or less, but don't go too cheap.
