Depending on conditions, i would go fish the llano. They have a strain of bass called guadaloupes which are almost trout like in that they love fast water. They aren't particularly big but fight hard. There are also some very big largemouth (I had one eat a bluegill that I was reeling in, must have been at least 6lbs). The llano is a bit over an hour from austin. If you have the time I'd rent a canoe but if not there are bridge crossings.
There is trout fishing on the Guadeloupe but that is a bit further and is mostly better bobber fishing.
