Dan, that's why i always bring along some bartles & james.... 

slightly more serious... without recommending particular streams, the way i approach this is looking up local/regional backpacking websites for treks. usually they include pretty good info/maps/pics of views/streams/campsites. then pull the topo maps for a better overview and also check out flickr for additional photos of the area/stream. general rule is if there's a decent flow and it's either in the park or protected land, you're going to find a fishable population of wild trout. only real exception to this i can think of within 3.5 hrs is dolly sods, where the acidity has killed off most wild fish.

If you do white oak, I highly suggest going before it turns to swim-able weather. I was up there last year and these 4 high school girls in bikinis just jumped it and didn't even seem to realize I was fishing and had sharp hooks.

 Also, If overnighting is too much then maybe a day trip. I just like the idea of having a fishing buddy up there for x number of reasons.
