For a more affordable option that works with 8 people, go out with one of the head boats. These are large boats that take out 25-40 random people a day and you pay by the person, a little over $100 for a full day offshore, this is pretty redneck but fun for sure. The other charter boats will run you close to $2000 a day, and as Jeff said they only allow 6 passengers. The head boats move from wreck to wreck and you drop baits deep for black sea bass, grouper, triggerfish, snapper, etc--bring a few large coolers, most of these are great eating. You won't troll for tuna, wahoo, dolphin or marlin, but you have a lot better chance of all the guys getting in on the action. I would recommend the Miss Hatteras out of Oden's Dock, this one goes offshore most days and is more importantly is BYOB, while some others sell bar-priced beer.
