I used to live in Vegas and bought an old Bronco just for this reason.  The Sevier River cuts the valley west of Bryce and has some great cuts, browns and rainbows.  I recommend parking right off 89 anywhere around Hatch.  Duck Creek is a great area if you head into the mountains on your way to I-15 and Panguitch or Navajo Lakes are loaded and the temp is cool.  If you go the Duck Creek route stop at Hot Mama's Pizza as it's the only place you can grab a brew for miles.  North of Bryce is Pine Lake--the hoo-doos extend that far up and the views are amazing.  There's also some streams north of Cedar City and Parowan that are decent but a little far.  They stock most of the reservoirs in S Utah so anywhere you should get a bite (especially around St George).  The Santa Clara River in the Pine Mtns west of St George is a treat (have to hike down cliffs) and a good back way into Vegas.  The Virgin is consistently too warm for good fishing.  Once you're in Vegas and need to cure that hangover, bring your rod to one of the marinas on the south side of Lake Mead with some popcorn and hook a 30-lb carp.

I am heading out to Vages for a conference at the end of June and plan to rent a car and explore for a week ending in Phoenix.  One stop will be Lee's Ferry, AZ.   but I am thinking about Zion or Bryce Canyons area.  Anyone who has trout fishing info on that area I would love to hear from you.   Thanks Terry
